So, it’s summer. Well, sadly, we’re well into August, so it’s already almost not-summer. But still. There is plenty of time left to tap into nature’s veggie-licious bounty and create this salsa/side dish/dip that will leave everyone coming at you with grabby hands, saying, “Nom! Gimme that recipe! Pronto!” (And, lucky for you, I’ll be giving you the recipe!)

The Backstory

Since I’m an author, I obviously have to indulge in a little backstory. So here’s how this recipe came to be.

After much discussion about food (always discussions about food), a friend decided it would be fun to host a monthly recipe party, whereby each attendee would bring a dish to pass and would print out the dish’s recipe for each of the guests to take home. The friend even made us all customized binders and filled them with sheet protectors in which to store our beloved new treasures. It was so swag. We’d all BYOB (or wine) and eat, laugh, and eat some more, until our adulting duties beckoned us home and we sadly had to bail. These parties went on for several months, each one with its own theme. We sampled breakfasts, hors d’oeuvres, side dishes, desserts, and everything in between.

The Recipe to End All Recipes

You know how sometimes you just click with someone? There’s that instant connection that leaves you a little dazed — and maybe even a little breathless — and you can’t explain it, but it’s there?

Yeah, that’s what happened with this recipe.

During only the second party (hors d’oeuvres-themed), Black Bean & Corn Salsa officially became my bae. The second the recipe-bearer set the bowl in front of me, we clicked. Then when she opened a fresh bag of restaurant-style tortilla chips, it was all over. I was smitten. And I hadn’t even had my first bite.

As soon as we were set free to start sampling, I grabbed a chip, plunged it into the (very visually appealing) mixture, and shoved it into my face-hole so quickly little chunks actually fell out. But it didn’t matter — the salsa was as delicious as I expected it to be. More so, even. It tasted like summer on a chip. And I was in love.

A Much-Celebrated Go-To

Not surprisingly, this salsa makes many (many) appearances during the summer months. I make it for potlucks and parties, and to have around the house for lunches and snacks. I could eat it almost every day. And aside from chopping some things, it’s very easy to make. Plus, look at it — it’s SO pretty!


Think you might want to add this to your summer recipe repertoire? I thought so! Here’s the recipe and it’s kind of loosey-goosey. Add or subtract as you wish, dependent upon your personal tastes.

Black Bean & Corn Salsa

1 can black beans, rinsed and drained
1-2 cans sweet yellow corn, rinsed and drained (I use 2, because CORN)
3/4 cup red onion, diced (or amount to taste)
1 bunch green onions, diced
2-3 tomatoes, seeded and diced
1/2 cup fresh cilantro, diced (or amount to taste)
6 Tbsp olive oil
2-3 tsp cumin powder
2 tsp garlic powder
Freshly squeezed lime or a few squirts of ready-made lime juice
Mix well, refrigerate, and ENJOY!

Note: the flavors come out best after it’s been refrigerated for a few hours, but if you’re short on time, room temperature is just fine. I like it any which way. It also keeps well for up to 3 (or so) days . . . if it makes it that long! 😉

So, there you have it! The next time someone asks you what you’re bringing to the potluck, you can say, “Summer on a chip, of course!”
