A Taste of Summer
In the summer months, I find it hard to cook—literal meaning. As the mere thought of turning on the stove or the hoven makes me sweat. Especially in scorching July! I try to get creative and work with cold/raw foods that need minimal heating. Since I associate summer the most with colored fruits and refreshing desserts, I wanted to share with you my favorite.
Ingredients for two servings
2 2/3 cups sliced strawberries (12 oz. pack)
1 1/2 tbsp. unflavored gelatin
2 tbsps. sugar
2 tbsps. lemon juice
2/3 cup chilled cream
Berries, mint leaves, and crushed meringues to decorate.
Clean and cut the strawberries and mash them in a food processor adding the lemon juice and sugar. Filter the mixture in a mesh colander to ensure a homogeneous blend.
Sprinkle the gelatin with 3 tbsps. of water in a very small saucepan and let it rest a few minutes until softened. Warm over low heat until the gelatin is completely melted.
Mix the gelatin with the strawberry blend and set in the fridge while working on the other ingredients.
Put the cream in a spacious bowl, preferably deep, and whip it until well firm.
Line the bottom of your serving glasses/bowls with half an inch/one inch of the strawberry-gelatin mix. (This is just a treat for the eye, to have two different colors when you serve.)
Slowly mix the remaining strawberry blend with the cream. Pour on top of your red lining and set to rest in the fridge for at least two hours.
Decorate to your liking. I like to use different berries: blackberries, raspberries, blueberries… I also like to add crushed meringues (chocolate coated for an extra kick.) To add a green touch, two leaves of mint work great.
